Well, Spock in the movie is supposed to be younger then the Spock of the show. He's more confused on where he stands emotionally/logically.

As for U/S, there were hints at it on the show, but it was never anything major. Poor Uhura has had a shippy-ish scene which pretty much everyone except McCoy and Chekov.
